Chocolate orange fig bars

Ingredients:

200g dried figs
220g ground almonds
Zest and 2 tbsp juice of 1 orange
75g Belize Lucocoa chocolate bar 

Method:

To start, cover the figs with water and set aside to soak for 10 mins. 
Finely grate 3/4 of the chocolate and add to a processor with the ground almonds and orange zest. Pulse until everything is evenly mixed. Squeeze out the excess water from the figs and add them to the dry mixture with the 2 tbsp of orange juice. Mix again until the figs are roughly chopped and the mixture sticks together when pinched. If it feels too dry you can always add a little extra orange juice.
line an 8 inch baking tray (or loaf tin if you want chunkier bars) with baking paper, press the mixture firmly in. Chop some of the remaining chocolate into chips and press into the bars, grate the rest over the top and place into the fridge for half an hour to set. Once set cut into bars and store in the fridge for up to a week.
